Pit and Tap is a new American barbecue spot in downtown Wilmette that serves everything from brisket to salmon. On their menu that have a traditional wing appetizer which is a perfect way to start off a meal there. The plate consists of just six average sized wings dressed in their buffalo sauce. I do wish that there was more meat on the wings for the cost.

The sauce is quite interesting as there is a hint of buffalo flavor. The sauce is very oily and parts separated into just oil. This gave the sauce a weird slightly off-putting taste. There isn’t a lot of sauce on the wings so there is a predominantly smokey, char flavor which is delicious. The wings are nicely crisp for a grilled wing which is rare. Generally, grilled wings make the skin slightly crispy until sauce is added.

The wings are $2.00 a piece which is quite high when factoring in the size of each wing. I highly doubt that a plate of six wings would fill anyone so think of these as less of a meal and more like a starter. Overall, these medium sized wings have a nice smokey flavor with a poor buffalo sauce.
